For the first couple of weeks of my first term back from London, I stuck to eating the same old foods. But through the lack of free-time that this term offered, and the stress it was giving, I quickly grew fed-up of eating the same foods day after day; the only healthy foods that I knew how to make with what little time I had, so I sought-out new recipes, and for about a week, I cooked a new meal everyday. First-up was this, called '30 Minute Coconut Curry.'
